Vegan Friendly: Lentil Curry

Ingredients:
1 tablespoon of olive oil
1 large onion, chopped
4 cloves of garlic, minced
1 tablespoon of curry powder
1 teaspoon of ground cumin
1/2 teaspoon of ground ginger
1/4 teaspoon of cayenne pepper
1 cup of dried red lentils, rinsed and drained
3 cups of vegetable broth
1 can of diced tomatoes, undrained
Salt and pepper, to taste
Instructions:
In a large pot or Dutch oven, heat the olive oil over medium-high heat.
Add the chopped onion and minced garlic, and sauté for 5-7 minutes or until the onion is soft and translucent.
Add the curry powder, cumin, ginger, and cayenne pepper, and stir to combine.
Add the lentils, vegetable broth, and diced tomatoes, and stir to combine.
Bring the mixture to a boil, then reduce the heat to low and simmer for 30-35 minutes or until the lentils are tender.
Season with salt and pepper, to taste.
