Vegan Friendly: Lentil and Vegetable Stir-Fry

This Vegan Lentil and Vegetable Stir-Fry is a healthy and flavorful dish that's perfect for a quick and easy dinner. Packed with protein and fiber, lentils and vegetables make for a satisfying and nutritious meal. Best of all, it only takes about 30 minutes of prep time!

Total Time: 50 minutes

Ingredients:

1 cup of dried green lentils
2 cups of vegetable broth
2 tablespoons of olive oil
1 large onion, diced
2 garlic cloves, minced
1 medium red bell pepper, diced
1 medium zucchini, diced
1 cup of broccoli florets
1 teaspoon of ground cumin
1 teaspoon of smoked paprika
1/4 teaspoon of chili flakes
Salt and pepper, to taste

Instructions:

Rinse the lentils and add them to a large saucepan with vegetable broth. Bring to a boil, reduce heat to low, and simmer for 20-25 minutes or until the lentils are tender. Drain and set aside.

While the lentils are cooking, heat the olive oil in a large skillet over medium heat. Add the diced onion and garlic and sauté for 2-3 minutes or until the onion is translucent.

Add the diced red bell pepper, zucchini, and broccoli florets to the skillet and sauté for 5-7 minutes or until the vegetables are tender.

Add the cooked lentils, ground cumin, smoked paprika, chili flakes, salt, and pepper to the skillet. Stir well to combine and cook for another 2-3 minutes or until everything is heated through.

Serve hot and enjoy your delicious and nutritious Vegan Lentil and Vegetable Stir-Fry!

Note: This dish can be served on its own or over a bed of rice or quinoa for a more filling meal.
