Mediterranean Delight: Quinoa Salad

Ingredients:
1 cup of quinoa
1 can of chickpeas, drained and rinsed
1 red bell pepper, diced
1 cucumber, diced

1/4 cup of crumbled feta cheese
2 tablespoons of chopped fresh parsley
2 tablespoons of chopped fresh mint
1/4 cup of extra-virgin olive oil
2 tablespoons of red wine vinegar
Salt and pepper to taste
Instructions:
Rinse the quinoa and cook according to the package instructions.
In a large bowl, combine the cooked quinoa, chickpeas, red bell pepper, cucumber, red onion, kalamata olives, feta cheese, parsley, and mint.
