Keto Friendly: Cheesy Cauliflower Casserole

Ingredients:

1 head of cauliflower, chopped into bite-sized pieces
1 cup of heavy cream
1 cup of shredded cheddar cheese
1/2 cup of grated parmesan cheese
1/4 cup of almond flour
2 cloves of garlic, minced
2 tablespoons of butter
Salt and pepper, to taste

Instructions:

Preheat your oven to 375°F (190°C).

In a large skillet, melt the butter over medium heat. Add the minced garlic and cook for 1-2 minutes, or until fragrant.

Add the chopped cauliflower to the skillet and cook for 5-7 minutes, or until it starts to soften.

Add the heavy cream, shredded cheddar cheese, and grated parmesan cheese to the skillet, and stir until the cheese is melted and the sauce is smooth.

Sprinkle the almond flour over the top of the cauliflower mixture, and stir to combine.

Transfer the cauliflower mixture to a greased 9x13 inch baking dish.

Bake for 20-25 minutes, or until the top is golden brown and the casserole is hot and bubbly.

Note: For added flavor, you can also add in some chopped bacon or cooked sausage to the casserole before baking.
