Diabetes-Friendly Lemon Garlic Chicken and Roasted Veggies

Ingredients:
4 boneless, skinless chicken breasts
2 large zucchinis, sliced
2 large red bell peppers, sliced
1 large red onion, sliced
4 cloves of garlic, minced
2 tablespoons of olive oil
1 lemon, juiced and zested
1 teaspoon of dried oregano
1/2 teaspoon of paprika
Salt and pepper, to taste
Instructions:
Preheat the oven to 400°F (200°C).
In a small bowl, mix together the olive oil, minced garlic, lemon juice, lemon zest, dried oregano, paprika, salt, and pepper.
Season the chicken breasts with the mixture, and set them aside.
